Coffee cheers to you pretties! I hope you have a great Wednesday morning and some seriously good coffee right now.
One of my favorite mantras when it comes to healthy eating is “food as fuel” and after my confession of last week, I thought today’s WIAW party would be a great opportunity to show what good fuel looks like.
Baked Oatmeal Stuffed Apple with fluffy Peanut Butter Yogurt
Dark Chocolate Mug Brownie with a side of Banana Peanut Butter Ice Cream (which sadly was already quite melted)
Raspberry Smoothie
(the recipe got reblogged a lot in the tumblr community, so I thought I share it over here too)
- 1/2 frozen banana
- 1/3 cup frozen raspberries
- 1/2 cup soymilk
- 1/2 cup greek yogurt (nonfat quark)
- 1/4 cup oats
- 1 tsp chia seeds
- 1 tbsp grated coconut
Mix oats, chia seeds and grated coconut with 1/2 cup water the night before and leave in the fridge to soak. In the morning just place all the ingredients in a blender and enjoy with a spoon!
I do especially love smoothies as an afternoon snack recently
. You can add a lot of protein by going for more greek yogurt. And I’ll always love to sneak in some greens: spinach or kale is the way to go.
Baked Pumpkin Oatmeal with Peanut Butter and Agave – this one never fails. My tummy was super happy and satisfied afterwards, so I could rock the books for a few hours straight before having my lunch:
Quinoa Eggplant Lasagna (it’s vegan and yeah the crust does not look like cheese – that’s because it’s not – but it’s still absolutely delicious, recipe will come soon)
Sadly the stress is not over yet for me. One exam written, two more to go. I cannot wait for Sunday! But feeding myself right, with healthy and satisfying foods helped me to stay concentrated and keep my cheerfulness through all those days of studying.

Everything looks so delicious, Ksenija! I’m especially eyeing up that oatmeal baked apple with nut butter yogurt. Yum.
While I think there’s definitely more to food than just being fuel for our bodies, there’s no denying that without food we wouldn’t be able to function, and it never ceases to amaze me how big of a difference I can feel in my overall health when I make sure to fuel myself properly.
Good luck with your studies! My favorite things to munch on when I have work to do are: fruits with nut butter, cereal with yogurt, veggies and hummus, and trail mix.

Trail mix was actually my choice today – but now that you mentioned it: I start craving hummus
. So probably a short stop at the grocery store tomorrow after the 2nd exam? I am going to consider that…

Would you mind sharing your recipe for the Pumpkin Oatmeal? I’m trying to change up my breakfasts and after today’s baked oats success this might be a great one, too. Oh, also: Did you post a recipe for that chocolate mug cake brownie before? Sorry for the many questions!
I’m using Quark as a Greek yogurt replacement, too. Which one do you use? I like the “Cremequark” type one – my favourite is the one by Berchtesgadener Land – because due to the addition of yogurt they’re, well, creamier than the rather “dry” ones coming in those square packages.

Having people at my place and cook for them is one of my delights.
I already posted one recipe for pumpkin oatmeal in my “temple cuisine” section. But the one pictured was even easier: I used some N’oats porridge (from mymuesli.de), added an egg white, butternut squash puree, raisins and soy milk and in the oven it went. Mug cake will come soon.
My favorite German quark which is perfectly as Greek yogurt replacement, since it has exactly the same nutritional value and (at least it seems like) consistency: Rewe Bio Speisequarkzubereitung. You can get it non-fat and 2% – I prefer the 2% one.
Ah, yes, that’s the one I’m using interchangeably with the one by Berchtesgadener Land. It just happened to be sold out all of the time at the Rewe around the corner so I looked for alternatives. I’m wondering whether other Germans use it as a Greek yogurt replacement, too

Oh I always shop at denns Biomarkt when I am visiting my aunt in Hannover, sadly we don’t have it over here, otherwise I would go crazy Wednesdays.
