Happy Monday fellow foodies! Actually, this first day of the weeks, which tends to be the longest and hardest of the seven of them, is nearly over. So, give yourself a clap on the back and suit yourself with a nice warming mug of tea… and a mug cake probably?
Monday’s also tend to be my laziest and less creative days. When I noticed that the fig challenge is coming up over there at Heather’s Meatless Monday, it came quite handy that my tummy was asking for a quick dessert to finish of my lazy dinner and I decided to create a…
Fig Cake in a Mug
- 1/4 cup ground oats
- 1 tsp coconut flour (can be substituted with other flour)
- 1 tsp ground flax seeds
- 1.5 tsp brown sugar
- 1/2 tsp vegan butter (can be substituted with coconut oil)
- 3 tsp apple sauce
- 2 tbsp soy milk
- 1/3 tsp baking powder
- dash of vanilla & salt
- 1 fig
First melt the butter and combine it with apple sauce and soy milk. Then put together all the dry ingredients and mix with the wet ones. Slice the fig in thin rounds and follow my step by step instruction:
Place two fig slices on the bottom of the mug, fill with half of the prepared dough and press down lightly.
Add another two fig slices on top and cover them up with the remaining dough, pressing it evenly again.
Decorate with the remaining fig slices. Place in your microwave for 1-2 minutes. And never mind to flip around, though the beautiful decoration will be left unseen on the bottom.
I finished it off with a dollop of my favorite Cashew Butter Mousse (1 tbsp soy yoghurt, 1 tsp vanilla protein pow, 1 dash agave, 1 tsp soy milk, 1/2 tsp cashew butter) and devoured happily.
