This recipe was waiting to be posted for a while now. So as you might have noticed my post became a little scarce throughout the last days. Intuitive eating is still great, I am great, but I am also doing quite a bit of living and enjoying the last days of my semester break. Add in some reading and a heap of new blogs dealing with topics as successful women, meditation, soul-search and all that jazz. It is fun for a change to get head over heals into other topics than food, cooking, diet and fitness.

So to not leave you without posts before I got my thoughts organized and start writing more posts about all those new topics I will share with you my recipe for easy homemade Veg Patties, quick to grab and throw on a salad or bun.

Cheesy Quinoa White Bean Balls

  • 1/2 cup uncooked quinoa
  • 1 large grated carrot
  • 1 big onion, finely diced
  • 1 can white beans (drained and rinsed)
  • 1 egg
  • 1.5 rye crispbread (crumbled)
  • 2 T nutritional yeast
  • 1 tsp salt
  • 1/2 tsp curry
  • 1 tsp cumin
  • 1 T olive oil

Cook the quinoa and prepare the carrots, onion, beans and crispbread. Place all of the ingredients in a blender and mix until you get a slightly chunky dough. Adjust the seasoning to taste.


Preheat oven to 350°F. Form patties or ping pong sized balls and heat a pan coated with olive oil to medium heat. Fry your patties/balls from both sides until slightly browned, than place them on a baking sheet. Place the tray when it is packed with all of your patties/balls in the oven and let them bake for 10-15 minutes, depending on chosen size and thickness.


When done either dig in directly, or let them cool down for half an hour before storing in the fridge (up to 5 days) or freezer.

They may not be the most beautiful patties (though they are quite pretty as balls), but they are so convenient. Take on out of your freezer, place them in the oven (350°F) for 5 minutes or on your toaster and toast them from both sides or in the microwaves for 1-2 minutes and they make a great protein side to your salads, steamed vegetables, fillings for your burger or wrap. That is why I always have some Bean Patties in my freezer.
