A beautiful Sunday evening to you all. Call me crazy, but while studying I am craving cookies b.a.d. It doesn’t matter if it is 0 or 30°C (32 or 86 F) outside, my brain wants this sweet chewy satisfaction for working overtime every day. And even now, that I am done with my exams I would never say no to a good, healthy cookie with my afternoon coffee or tea. I just roll this way. So here my current healthy favorite, which (surprise, surprise) does also help with my goal of increasing my healthy fat intake, keeping the blood sugar low and the tummy longer satisfied. After some recipe research I came up with my own recipe and was lucky. They came out pretty perfect: subtle and rich in one bite, with a chewy center and slightly crunchy top.

Paleo Chocolate Chip Cookies

Yields 14 small cookies (or 7 big ones)

  • 1 cup almond flour
  • 1 tbsp coconut flour
  • dash of salt
  • 1/2 tsp soda
  • 1 egg
  • 2 tbsp coconut oil/butter
  • 1 tbsp honey (or agave, maple syrup)
  • 1 tsp vanilla extract
  • 1 heaped tbsp dark chocolate chips

Preheat oven to 180°C (350 F).

Mix dry ingredients in one bowl: flours, salt and soda, and egg, honey and vanilla extract in another. Combine both, melt the coconut oil and fold it in. Mix until everything is nicely incorporated before adding the chocolate chips. The dough should be easy to handle. Take one teaspoon of dough (or two if you want to have big cookies), place on a baking tray with baking paper and press down slightly. Move the baking tray into the preheated oven and let the cookies bake for 6-8 minutes, or until their top became golden brown.

And to assure you of my sanity: I do feel the heat and do crave ice cream. That is why I also made a batch of coconut ice cream from Elena’s Pantry (omitted the chocolate chips and used vanilla sugar instead of coconut sugar and vanilla extract), topped it with fresh cherries and cookie crumbles. It is my favorite time of the year, by the way: cherry season! I could eat cherries with anything all the time. They hold so many dear childhood memories. Plucking them off the tree, dripping red juice on my chin and cherry pit spitting contests with my younger brother. Nevertheless, the cookie was absolutely necessary to bring the coconut ice cream and cherries together in this satisfying creation.cookies n cream
